BEHIND THE SCENE – EMMA WARD, GENERAL MANAGER, UNCLE HENRY’S FARM SHOP, BUTCHERY & CAFÉ
In the second of our new series called Behind the Scene,
we took a trip to Grayingham, near
Gainsborough to Uncle Henry’s Farm Shop, Butchery and Café.
The award winning Farm Shop, Butchery and Café based in the Lincolnshire countryside, and showcases the best in local and regional food and drink.
Winners of over 100 industry awards, the family run business continues to go from strength to strength every year.
Tell us about your
background and how you came to the role you are in?
The award winning Farm Shop, Butchery and Café based in the Lincolnshire countryside, and showcases the best in local and regional food and drink.
Winners of over 100 industry awards, the family run business continues to go from strength to strength every year.
We caught up with Emma Ward, General Manager (and the next
generation of the family learning the ropes), to find out where her passion for
local food and drink comes from – and to find out why the business was called
Uncle Henry’s?
My passion is great tasting local food! Growing up on a pork
and potato farm, I have always had an interest in food. I’ve spent the last few
years exploring various aspects of food industry, from manufacturing to large
scale retailing before returning home to run Uncle Henry’s Farm Shop, Butchery
& Café, our family business. Our mission is to be the heart of good food; we
aim to provide an exceptional customer food shopping and eating experience,
making us the destination of choice for local people.
What does
Lincolnshire mean to you?
Lincolnshire to me means wide open spaces, the rolling hills
of the Lincolnshire Wolds, glorious sunsets and of course prime agricultural
land producing much of our countries cereals, vegetables, ornamental crops,
pigs, eggs & poultry, prime Lincoln Red Cattle & Lincolnshire , sheep.
How did you get
started?
We are a family run farm shop, butchery and café, just off
the A15 near Kirton-in-Lindsey. Uncle Henry’s was started by my parents in 2006
although we’ve been producing and butchering top quality food in our family for
five generations. The business takes its name from our family friend Henry
Wright who used to live in the house behind the farm shop which is still
visible from our outside dining courtyard. The name of the business was taken
from my brothers & I asking our Mum if we could ‘go and visit Uncle
Henry’s?’ as we used to love playing in the then derelict barns when we were
younger! The former agricultural barns have now been converted into the farm
shop, butchery and café, retaining and enhancing many of their existing
features.
Team – Tell us about
your team.
All of our efforts would not be possible without our dedicated team of
24 full and part time staff members. All of our team are local people
themselves, and they are essential to our business success. We are Investors in
People and we invest in our team’s training and development but above all else,
we make Uncle Henry’s an enjoyable place to work.
Tell us which local producers do you use
Uncle Henry’s majors on sourcing fresh, local and seasonal products. We
produce and make many of the products that we sell ourselves including our
award winning sausages and bacon and we’re always developing new lines to add
to our range. We use as many local ingredients in our home produced added value
products as we can – for example our Argy Bargy Sausage is made using Mr Huda’s
Curry Paste from Scunthorpe.
We are proud to
support over 40 Lincolnshire producers; our local food heroes! We see ourselves
as a hub for Lincolnshire food and an outlet for local food businesses to
showcase their product. We have some fantastic local producers from Primrose
Free Range Eggs from Goltho, to Pollybell Organic Vegetables from Epworth,
Myers Plumbread in Horncastle and local Croft Apiaries Honey from Bishop Norton
whose bee’s hive on our farm.
Do you engage with local
community groups or put on events?
We strive to make a positive difference to our community, whether that
be through our support of other local food businesses, educating children
through over 40 school visits per year, our work with local charities and
groups or just being a fun destination for local people to meet, greet, relax
and enjoy!
Our calendar of events is action packed and ever expanding. Some of our
events have been so popular that they are now annual calendar fixture. Our
annual Open Farm Sunday attracts both young and old with over 3,000 attending
this year. It is a free event and a fantastic opportunity for us to bring
together both the farm shop and farming side of the business and for our
customers to learn more about how their food is produced. We run the event in
conjunction with our local Rotary Club and all proceeds go to their chosen
charities – this year, we raised £2,576.86.
In July, we ran a curry night to raise funds for Lindsey Lodge Hospice
where one of our expert Lincolnshire producers ‘Green Saffron’ were chefs for
the evening and we raised over £150. We also support charity events held
outside of Uncle Henry’s through donations of raffle prizes for example. This
year to date, we have donated over twenty high tea’s for two for events such as
Hibaldstow’s Scarecrow and Open Garden Day which raised £2,546.00 and Wise Owls
Nursery in Kirton-in-Lindsey who raised £224.00.
On an international
platform, where does Lincolnshire sit?
One of Lincolnshire’s primary industries is Agriculture,
providing export products of all agricultural commodities.
Lincolnshire is becoming a great tourist destination and
through our rail and air travel links, the county is highly accessible. Uncle
Henry’s caters for this growing tourist market through our position as a one
stop shopping destination.
What’s your favourite
food fantasy/recipe and why?
It will
probably come as no surprise (being pig farmers!) that we have chosen a pork
recipe as our favourite. Coming into the autumn and winter months, this is
a firm favourite for Sunday lunch.
What would you say to
other Select Lincolnshire members?
If you’re a grower or producer, come and speak to us – we
are always looking for new products & ideas!!
How do you channel your food passion within your business and personally.
We consider
our USP to be our farm to fork experience, providing the very best in locally
sourced produce whether that’s grown, made or butchered here at Uncle Henry’s
or sourced from our Lincolnshire suppliers. We do however need to keep our
shopping experience interesting and exciting for our customers and I channel my
food passion through Uncle Henry’s by always looking ahead to the next new idea
to ensure that we continue to delight our customers through our fantastic food
offer which is great quality and affordable.
I channel my passion for food personally through cooking and
I am an avid collector of recipe
books! I will happily sit down in an evening and read a good recipe book and my
favourite at the moment is Rosie Ramsden’s The Recipe Wheel. I love the concept
of this cookbook which turns the style of a traditional recipe book completely
around. Her book is based around a range of simple core recipes such as a
risotto. From this core recipe, a bit like a mind map, leads different recipe
options to suit your time, the occasion and your budget.

GRIMSBY'S SCRUBBYS CRISPS BRAND GOES NATIONWIDE WITH OCADO LISTING
Scrubbys Vegetable Crisps, a Select Lincolnshire member based in Grimsby, North East Lincolnshire is celebrating the news that their crisp brand, Scrubbys, is now available nationwide – via online supermarket Ocado.
The fledgling firm has both of its flavour creations
listed by the company, putting it alongside industry giants Kettles and
Tyrells.
The 100g bags are being sold at £2.49 by the online
operation, which dispatches more than 155,000 orders a week, and has enjoyed 22
per cent growth year-on-year.
Claire and John Brumby are the couple behind the
Europarc-based venture, and believe this new listing could be a game-changer
for the brand, which currently shifts around 10,000 bags a month. And with some
eye-catching London stockists in Harrods, Fortnum and Mason, As Nature
Intended, Partridges and Planet Organic joining farm shops and delis up and
down the country, enthusiasm for the recognised "Cool Brand" and
Great Taste Award winner remains strong.
While it comes just two years after the launch at the
Northern Lincolnshire Business Awards, captured on the front page of the
Grimsby Telegraph, for the husband and wife team with marketing and
agricultural backgrounds it has seemed like a lot longer.
In the past 12 months outlets have risen from 100 to nearly
300 for the vegetables crisps, cooked using high oleic sunflower oil with the
technique bringing down the fat levels in comparison to rival brands.
The original flavour of beetroot, sweet potato,
parsnip and carrot with sea salt was complemented by parsnip, chilli and lime
in spring last year.
Mrs Brumby said: "We are over the moon with this
listing, it’s come just as we’ve just turned two, which sometimes it feels like
a lot longer; sometimes it feels like we are not going quick enough, but then
we sit down and think what we have done. We have a Great Taste Award, we have
been named a Coolbrand and shortlisted at the FreeFrom Awards. We have got our
heads down and done our thing, and now we have between 200 and 300 stockists.
"We are looking forward to securing more listings
soon. It does take time, volumes have increased gradually, and everyone who
stocks us does restock."
Radio 2 breakfast host and media personality Chris
Evans is a fan, with Dragon Theo Paphitis having backed their efforts through
his Small Business Sunday social media competition.

MEMBER SPOTLIGHT: OWNSWORTHS RAPESEED OIL IN NATIONAL MASSAGE DAY
Friday 16th May is National Massage Day! It is aimed at helping our society understand the positive effects of touch and massage. Gill Tree, founder of the UK's leading massage school Essential for Health, says "Touch is instinctive and natural. It is part of human nature and yet we as a society remain inhibited. We also perceive massage as a luxury rather than a necessary treatment for a healthy lifestyle. With media impressing on us almost daily the negative effect of inappropriate touch, we are failing to recognise the negative effect of not touching."
Rapeseed oil is fast becoming a favourite amongst aromatherapists and massage experts as a wonderful lubricant for massage, so we asked Select Lincolnshire Grower of the Year runner up 2014 Ownsworth's to tell us about the health and cost benefits of using Rapeseed oil.
Ownsworth's Rapeseed Oil
Rapeseed oil is fast becoming a favourite amongst aromatherapists and massage experts as a wonderful lubricant for massage, so we asked Select Lincolnshire Grower of the Year runner up 2014 Ownsworth's to tell us about the health and cost benefits of using Rapeseed oil.
Ownsworth's Rapeseed Oil
Ownsworth’s award winning home-grown rapeseed oil is grown from oilseed rape planted on our family farm in Lincolnshire. The seed is then cold pressed and bottled by us in our specially designed Pressing Shed providing total traceability for this high quality oil.
Rapeseed oil is high in omegas 3, 6 and 9, vitamin K and contains a good amount of anti-oxidant Vitamin E, which is a powerful lipid soluble anti-oxidant. Vitamin E is perfect for softening and nourishing your skin especially when having a relaxing massage and gentle enough for a baby’s skin.
Rapeseed oil makes a perfect carrier oil for the extensive range of fabulous smelling and health promoting aromatherapy essential oils which are readily available from either your local chemist or your aromatherapist (see local press Yellow Pages for listings).
We visit Clinical Aromatherapist Paula from Paula Hinton Aromatherapy at Allington near Grantham www.paulahintonaromatherapy.co.uk and her feedback on using our oil for massage is-:
"Ownsworth Rapeseed oil has become a firm favorite of mine for all types of massage. With its mellow yellow hue, this virtually odourless oil provides a light clean feel that glides smoothly over the skin making it a perfect choice of carrier oil for aromatherapy massage.
Hailed as the ‘British olive oil’ rapeseed oil is high in antioxidants which help to protect the skin against the main causes of skin ageing, such as ultra violet light, radiation and air pollutants. Its high content of Vitamin A promotes cell division and helps protect the skins cells against UV radiation.
This highly emollient oil is a great choice for facial use too. With the addition of tiny amounts of essential oils; such as wrinkle fighting Frankincense or skin calming Roman chamomile; a tailor made skin oil can be created. Used daily rapeseed oil can brighten, soothe and protect the skin."
In addition to all this the fact that Ownsworth rapeseed oil is grown and cold pressed just down the road from me adds to its allure. Along with its local provenance I love knowing how the oil was obtained, using as little processing as possible, so keeping all its nutrients intact.’

Rapeseed oil makes a perfect carrier oil for the extensive range of fabulous smelling and health promoting aromatherapy essential oils which are readily available from either your local chemist or your aromatherapist (see local press Yellow Pages for listings).
Unlike some of the other carrier oils available, rapeseed
oil remains extremely good value for money as well as containing all the
vitamin E rich and skin softening properties.
Not to mention rapeseed oil from the UK is local, has no air miles and
is supporting the British farming industry - thus putting money back into the
local and national economy!
Benefits of
choosing rapeseed oil over other carrier oils?
- high in omegas 3.6 & 9, rich in vitamin K & vitamin E.
- Rapeseed Oil contains 10 times the amount of omega 3 found in olive oil.
- Ownsworth’s Rapeseed Oil has a shelf life of at least 2 years and is free from chemicals, preservatives and has had no heat treatment, is paraben and synthetic free. Just pure and natural!
- Jojoba (one of the most expensive unscented oils and can feel slimy afterwards)
- Grapeseed Oil (not a fixative so you have to blend with another oil)
- Sweet Almond Oil (not advisable if you have a nut allergy)
- Apricot Oil (expensive)
- Coconut Oil (can feel greasy after a massage and all those airmiles!)
- Baby Oil (contains petroleum which clog up the pores and make it difficult for the skin to breath)
There’s lot of information out there on the internet on
all the oils and especially rapeseed oil so have a look and see for yourself.
So for a high quality, fully traceable oil which has all
the qualities you look for in a good massage oil and at a price to suit all
budgets, why not take a good look at using our rapeseed oil. Lots of the larger beauty and cosmetic
businesses are already using, and shouting about the fabulous properties of
rapeseed oil (see www.Liz Earle.co.uk).

500ml glass bottles and 5 litre and 25 litre cans for the aromatherapy or
massage businesses looking for a quality British oil.

THE GENEROUS BAKER LAUNCHES IN MARKET RASEN
Steve Rowland, ex IT boffin and now a happy floury baker in a mid-life career change, chose Market Rasen’s market to launch his new business to the town’s visitors and foodies…
The Generous Baker was launched on the first Saturday of March 2014, and was so named as the ingredients are generous, whether in terms of quality or quantity or both! As much as possible, ingredients are sourced locally with the flour coming direct from the Maud Foster Mill in Boston. All eggs are free- range, as well. It’s the right philosophy, I think, and certainly how I do my own shopping!
Several markets were visited over the course of a number of months before the decision was taken to debut at the ‘Mr BIG’ March event in Market Rasen.
Market Rasen has a great feel to it and has had a market place for over 800 years. The town was the smallest of the Mary Portas ‘Portas Pilot Towns’ chosen in 2011; it received assistance in rejuvenating its high street and was featured on tv. The initiative has certainly helped, with visitors being offered a variety of goods in the high street shops (and neighbouring streets), the architecture of which features pretty Georgian and Victorian buildings. The antique shop was a favourite of ours, plus we liked the deli, Greens of Lincolnshire in particular. The market is an integral part of the shopping experience and has already won two awards, the latest being The Best Social Enterprise Market 2014.
The ‘Mr BIG’ market is held in the market square on the first Saturday of every month; the stalls are conveniently and attractively arranged in two large circles. I was amazed by the variety and quality of goods on sale including free- range pork, free- range eggs, honey, jams, cheese, artisan wood-fired bread, cakes, vegetables, pies, oils, plants, bird houses, haberdashery, jewellery, vintage collectables and there was even a hog roast and refreshments available for the hungry market goer. An accordion player added a rather jaunty air, and I hope he is there next time!
A great day was had by traders and members of the public – everyone seemed to be smiling! - and I've already confirmed my attendance for the next one on Saturday April 5th (9am - 3pm) so please do say hello if you're visiting. If you’re not from Market Rasen, it is worth a morning’s trip out and of course, as the town is delighted in reminding you as you drive in, parking is free!
